Whilst the greatest effort has been made to ensure the quality of this text, due to the historical nature of this content, in some rare cases there may be minor issues with legibility. The authors have had practical experience in their own homes as well as wide experience in teaching cookery to girls and women. They are enthusiastic over the possibilities of the value of scientific knowledge to the tens of thousands of home-makers who have not had scientific training. They have written the book in the hope of doing a service to all such home-makers, to the teachers of classes of older girls - wh ether in high school, Y. W. C. A., settlement, or else where - and to the girls themselves. They are not offering a contribution to scientific research but a first aid to the girl or woman who wants to take advantage of the research that has been done. It is the service of the middleman between the laboratory of science and the kitchen of the school or home.
